Red yeast rice, a special type of red fermented rice, is made through a fermentation process based on glazed rice. Red fermented rice is mentioned as early as 1576 in the Chinese "Book of Medicinal Herbs" by Ben Cao Gang Mu. Today we know the reason: Red rice inhibits an enzyme in the liver, hydroxymethylglutaryl coenzyme A reductase. This enzyme is responsible for the body's own cholesterol production by the liver.
Consumption recommendation:
