Lecithin describes a group of fat-like substances, the phosphatidylcholines. These are made up of fatty acids, glycerine, phosphoric acid and - as the name suggests - choline. Phosphatidylcholines are part of all cell membranes, including those of the brain and nerve cells.
Soy is one of the vegetable sources of lecithin with the highest choline content.
Choline turns into acetylcholine, an important neurotransmitter for the transmission of stimuli in the brain and nerves.
Choline contributes to the maintenance of normal liver function and plays a role in the functioning of homocysteine and lipid metabolism.
